KFC and bakery egg tarts are way too sweet, so I started baking them at home. The tart shells are store-bought, and the custard filling uses Xiaogaojie's low-sugar recipe. For 18 tart shells, you need:
- 180g milk
- 200g 35% cream
- 60g sugar
- 3 egg yolks
- 1 whole egg
Mix all ingredients in a bowl until the sugar dissolves completely. Strain the mixture into a measuring cup, then pour into each tart shell. Bake immediately.
Xiaogaojie recommends 260°C for 12-13 minutes, rotating the tray once for even browning. However, my oven maxes out at 230°C, and I found that the shells burned after just 10 minutes. So I suggest a lower temperature: place the tray in the middle rack and bake at 200°C for 15 minutes.
Even with reduced sugar, the tarts still taste quite sweet. Next time, I'll halve the sugar again.
The result looks and tastes just like KFC egg tarts. Making them at home is simple, safe, and reassuring!
